A pivot is three questions
What do I want down the side, what do I want across the top, and what am I counting in the middle. Every pivot table is those three choices, and every spreadsheet buries them under a dialog. Picking them from three dropdowns and seeing the answer immediately makes the whole thing quick enough to explore rather than plan.
Rows, columns and values
Rows are the thing you are comparing, usually a category such as country or product. Columns are the second dimension you want to break it down by, and can be left out entirely for a simple grouped list. Values are the numbers being summarised in each cell.
Pick the right summary
Sum answers how much, count answers how many, and average answers how big is a typical one. Distinct count is the one people forget: it answers how many different customers rather than how many orders, which is a different and often more useful number.
Totals belong on the edges
Row and column totals turn a grid of numbers into something you can sanity check. If the totals do not match what you expected from the source, that is a data problem worth finding before the chart goes into a deck.
